This is a delicious biodynamic amber-colored wine made from the Khikhvi grape. It is a wonderfully spicy wine.

Harvest Details The Khikhvi grape is picked by hand at night. The winegrower indicates that due to the lower temperature at night, the aromas are not lost and the absence of UV light does not oxidize the grapes, making the taste of the wine more intense.
Production method Georgian Kakhetic Qvevri technique With this traditional technique, the wine fermentes and ages in a large earthenware vessel, the Qvevri, which is entirety placed underground. The pressed grapes go into the Qvevri with stalks, seeds and skins. The fermentation process takes about 2 weeks, during which the wine is stirred manually three times a day. The wine remains in the Qvevri for 6 months, then another month in a Qvevri, but now without the peels, seeds and twigs. The wine then goes into oak barrels for 4 months. Finally, everything goes back to bottling in a Qvevri.
Taste Serve the wine at a temperature of 16-18ºC.
Store In a cool place of 5-20ºC with an average humidity of max. 85%.
